Janos was Tucson's celebrity chef before there were such things, a genius working with local ingredients prior to it being fashionable to be a locavore. Plus, with Wild Johnny's Wagon, he was doing food trucks before those were a thing. Thirty-one years ago, Janos rolled into town after a trip to France and Tucson's food has never been the same. We're certainly thankful that there's more competition in this category all the time, but we also suspect that Janos might not let go of this title terribly soon.
