Moments after you're escorted to your table, a metal lazy Susan with three kinds of salsa is delivered, all freshly made: a thin, red chile brew, not too hot but with plenty of character nonetheless; a chunky salsa fresca thick with tomatoes and diced onions; and a sublime green tomatillo sauce.
