Best Huevos Rancheros

STAFF PICK: Folks have some strange notions when it comes to huevos rancheros. Once, at a diner in Texas (that explains it), what we got was a bizarre melange of chopped-up old hamburgers, pork and beans and what looked like powdered egg, topped off with a large dollop of tomato paste. The huevos rancheros at Micha's, 2908 S. Fourth Ave., are unsurpassed. Served--for good reason--on a deep platter, the order includes two perfectly over-easy eggs on a tortilla de maize, literally swimming in fresh green chile with a working-folk portion of delicious refried beans and more tortillas to sop it all up with. This plate'll get you through 'til lunch the following week. Order a large orange juice at Micha's and you get a by-gawd-huge OJ, not the Lilliputian thimble-sized whiff of Tang many restaurants offer these days.
