Weekly correspondent was invited to observe the wait staff as they were trained by their corporate director of wine, Marian Jansen op de Haar. When customers are paying a minimum of $27 for a cut of steak--à la carte--customer service is key. Like a prime steak, Fleming's customer service is a cut above its local competitors. Another complement to the steak: the 100 wines available by the glass, listed by intensity from lighter to heavier. Fleming's exudes the air of a private club where the public is always welcome.
