In this post-modernist era, there is no objectively perfect salsa, just as there is no perfect beer, dog or climate. It's all a matter of balance and personal preferences. Guadalajara Grill's response to this is to put you in charge of salsa production: You concoct your own favorite combination of ingredients. Diners after 4:30 p.m. or so, and at lunch on weekends, are treated to a personal salsa cart which rolls up to the table. A uniquely individualized salsa is then assembled to your specifications. You choose the amounts and ratios of fresh tomatoes, tomatillos, garlic, chiles, onions, cilantro, salt and pepper to be ground by hand in the molcajete. If you don't love the result, you have no one to blame but yourself.
