The Neiman Marcus of coffee houses is downright serious about its house blend. Never (or at least so far) has there been a featured coffee of the day or a flavored coffee; there are syrup shots for the latter. Take an exhilarating combination of South American, African and Asian beans; each continent's beans are roasted individually, then blended together and frozen in small batches. Their house blend esteem derives from roasting the three varieties at different temperatures for appropriate lengths of time to obtain the mysterious and often delirious medium-dark roast of roasts. Call it what you will, but the good folks at Raging Sage consider themselves slaves to quality, and we applaud their mission.
