The Armitage Benedict, of course—and this dish is something close to heaven. While the poached eggs are still there, this dish substitutes crunchy asiago toast for an English muffin, and prosciutto for Canadian bacon. There's a slice of havarti or two, bites of tender asparagus and the luscious, housemade hollandaise sauce that holds a pinkish hue. All you need is a bellini or a house Bloody Mary, or perhaps a flight or two of wine. Armitage is a great wine bar, after all.
