The papered windows, the coming soon sign, and the patient (or not so patient as the case may be) waiting to see what is the restaurant at 50 E. Broadway in downtown continues on. The mastermind behind this place, Patricia Schwabe, spoke with my predecessor back in August here. She revealed that it would be Mexican in general, but not the "typical kind," and was talking about an August opening.
Well we can see that goal was not met. I’ve been in the restaurant world long enough to know this isn’t uncommon. No big surprise. Flash to the present, and I've receive some information, from one of my reliable sources, that the individual hired to be the chef was let go a couple days ago. This made me wonde:. What is going on? Are they going back to the drawing board or did they just find a better candidate? To the Noshphone! (Insert appropriate music here)
I spoke with Schwabe and she informed me that they are shooting for the end of the month or early February to open. She has also settled on a name, Penca. When asked about having a chef, she said that there wasn’t anyone that really held that title, including herself, but that her and her kitchen staff was working as a team to finalize recipes.
