Moments after you're escorted to your table, a metal lazy Susan with three kinds of salsa is delivered, all freshly made: a thin, red chile brew, not too hot but with plenty of character nonetheless; a chunky salsa fresca thick with tomatoes and diced onions; and a sublime green tomatillo sauce. The salsa and chips keep coming as long as you're there. We know: We've chomped on them for hours on end, and we're better people for it.
