Best Huevos Rancheros

Frank's Restaurant

The huevos rancheros at Frank's Restaurant aren't fancy: A tostada is topped with refried beans, eggs, mild salsa, red sauce and a few shreds of cheese, and served with a side of potatoes. What makes the meal memorable isn't on the plate; it's the fact that Frank's customers are called by first names, and regulars greet each other with smiles. Coffee is constantly refilled, and orders come quick. A waitress giggles when a man looks at his screaming baby and yells, "Isn't it great that we don't have to worry about yelling in here!?" Then the baby stops screaming and giggles, too. "Eat and get out" might be this eatery's slogan, but there's a lot more than attitude going on beneath the rough exterior.
