The simplicity of this soup is what makes it so spectacular. Vichyssoise is one of those iconic French foods, so what better dish to have on the menu at this chic, Downtown brasserie? It's snow-white and chilled and creamy and aromatic from the leeks (the ingredient that elevates this potato soup above all others). The crunch of golden shreds of chive adds a nice touch. With a hunk of the bread that accompanies all meals at Augustín, this makes a fine starter or perhaps a light stand-alone lunch. Personally, I'd order two bowls; it's that good.
