Beyond Bread

Shelby and Randie Collier brought a little idea from Madison, Wis., about seven years ago and turned it into a great big deal. They wanted a sleepy little bakery, but what Tucson got goes way beyond the bread: dozens of hot and cold sandwiches, soups and salads, as well as a cornucopia of pastries, including scones, croissants, muffins, quiches, cookies, cakes, tarts and tortes. They're so good, you'll want to rub them in your hair (but don't; it'll be more satisfying if you eat them). Ah, but the bread, you say: It comes in three dozen varieties, ranging from good ol' white all the way to specialties like challah, babka and ciabatta (look 'em up). This bread rises all the way to heaven.
